Float

Good morning to you, where ever in the world you may be. It is December 17th and Christmas is 8 days away. My kids were here this past weekend! Hubby and I enjoyed every moment. It is so nice to see how well my children get along, my heart felt feels so big. It is still hard to not worry about them even though they are adults, but I do. They proudly gave me a fabulous gift that I was not expecting. Me, I am the parent that insists they do not spend money on me as I would rather they spend it on themselves or their kids or bills or whatever. Anyhow, the boys surprised me with an air fryer! It is funny, but I had one in my Amazon cart for the last few months but I kept talking myself out of purchasing it. Let me tell ya, I love it!

Air Fryer tortilla chips!

The first thing that I tried to cook in the fryer is tortilla chips. Well, I needed something to eat the salsa that was left over from our party. Honestly, I was not expecting them to turn out as well as they did! Since my gallbladder surgery, I have been trying my hardest to eat foods lower in fat. This will definitely help.

Tamale in the making

Speaking of making foods lower in fat, I made turkey and chicken tamales, instead of beef or pork. To be honest, I have only made tamales a few times in my life as I had been intimidated by the process. You know, if you don’t have perfect masa then you will never have a good tamale. Well, that is what it seemed like when my Mom used to make them. I remember her whipping the masa by hand, her hand in a roasting pot. To me it looked like at lot of work that I just did not want to get involved with, no way.

The one thing that I remember from those past tamale sessions of my Mom is how hard she made getting the masa to float. When the masa was fully mixed and felt right, my Mom would pull a tiny piece of dough from the pan and then plop the dough into a glass of water. If the dough floated, it meant it was ready for wiping onto a corn husk or hoja.

I made a few dozen chicken and black bean tamales and a few dozen turkey tamales. Happy that they were all eaten. The weekend, though, went much too fast. I did not pick up my camera once as I wanted to be present for everything. Also, I didn’t take many photos with my camera phone. I did take photos at my youngest grandsons birthday party that also happened last weekend but have not yet reviewed them as I have had some technical difficulties as of late and a very broken laptop.

All in all, Hubby and I had a lovely weekend with the kids and we look forward to visiting with them soon. I did throw out the suggestion to plan a trip to Borrego Springs in the Spring or early summer and my sons are down. Now to do some planning.

Time for me to get on with my day, the grandkids will be here in a few hours. I have been working on Christmas cards and hope to finish a few more before they get here. Today will be long for both both Hubby and I as he will be playing tonight in Indio at the Tack Room Tavern with the Ghosts of Kelso.     1. I got one of my computers working! Yay! It is slow as molasses but it works and Hubby hooked it up to a TV screen so now I can really see the screen 🙂

  3. Glad you had a visit with your kids and loved that they got you an air fryer,. I very seldom use my stove I use my air fryer to bake, roast, rotisserie, and air fry , super simple. Enjoy your weekend
