Good morning out there? You made it to see another day, and as always, that is a good thing. Today is November 9, 2021. Last week was relatively quiet, except for when the grandkids were over. Even our Halloween was quiet. We had two trick or treaters come to the door and that was one more than last year. Now to figure out how to repurpose the chocolate that we have left over and maybe create some new desserts. I guess I am in my cooking season. The weather is cooler, making it comfortable to work in the kitchen or even out in the back with the grill. I even stepped out of my comfort zone and sent a recipe out to a friend (when she saw what I had posted it on IG.) One thing about me, I have issues sharing my recipes and I will get into that in a bit. Anyhow, I have been trying to eat out less often and have been making more of my meals at home. Truthfully, I am trying to keep from putting on the weight that I lost in the last few months. Since I have been choosing to eat less fast food, I have been able to maintain it. Now to make better choices.
My Mom used to make pumpkin pies out of the jack-o-lanterns my Dad carved back when I was a kid in the 70s. As I got older, or around the 80’s she started using canned pumpkin puree. This time I cut the pumpkin in half, scooped out the seeds and stringy stuff, put both halves on a baking sheet and baked the pumpkin for about an hour at 400 degrees.
While it baked I cleaned up and went up stairs to paint. The house smelled so good. I had combined a few different recipes as I have issues following directions, So I was not sure how it would turn out. I had set the timer for 50 minutes and started checking it around the 40 minute mark. As soon as I got a clean pull, I removed it from the oven.
The hardest part of making this dessert was the clean up.
So, I posted a picture of this to my personal IG stories and an old high school friend asked if I could send her the recipe. Below is my chicken scratch or road map to the most delicious and moist bread.
It was nice that my friend asked me for the recipe so I retyped it out, and added a few other instructions and sent it to her. She is a chef, also, and I know that she will tweak and modify this recipe to make it her own and this is A-Okay with me. You see, I have issues giving out any recipes as I still can still hear my MIL asking me for recipes and then making what ever I made and then telling me and everyone how she made it better. She did that with everything. It was like there was this invisible competition between her and I over her son, and then my kids. Trust me, I waved the white flag and let her win and have him back. Often in my posts, I refer to Salsa. She was always asking me for the recipe and then my kids would also ask, saying “Hey Mom, why won’t you give grandma a copy of your salsa recipe.” Well, there now, you have it, why I refused to give it to her. Salsa reminds me of parties and good times and my family. It tastes like home to me and I just couldn’t have her bastardize my memories. Her and I had a contentious relationship, I respected her as the mother of the father of my children, but could not get close to her or allow her into my world, but appreciated that she loved my children fiercely. When her son and I split up, he and I made a conscience effort to not speak ill of each other or our parents in front of the kids. It was hard but I kept my end of the bargain up until my youngest was almost considered an adult. You see, I may not see eye to eye with the choices that my youngest son has made, but his children, my grandkids, will never know that. When they are with me, I will keep teaching them to respect their parents and letting them know that if Mom or Dad say “No.” Then Grama says “No.” as well. I know how hard it is to let go of your children and I am learning, just as I am learning to pass on recipes.
I finished the above painting yesterday. This was painted on a11x14 canvas board that I bought at the Dollar Tree as was inspired from a photo shoot I did with Ashley Renke-Hawk in 2019 on a road in Palm Desert.
Really, I still have a few touch ups that need to be done to it. Soon it will look good on my wall! Now to work on a few of the other things that I have on my list of things to paint. I still have hopes of recreating some of the live music shots that I have taken in the past four years and have picked out a few to sketch. Hopefully, in a few weeks, I can get a few good shots of Hubby and the rest of the band when they play at the Palm Desert Park. I am really looking forward to the next time they play as the original guitarist will be coming back to play with the the Ghosts of Kelso! I still remember the first time that Hubby played with the guys back in 2016. Here is a little sample of the guys in action.
This 5 minute long video was made back in 2017 and features the band and if you skip to the last 5 seconds of the video, after the credits, my voice makes a cameo.
I love their interactions and even though Jim had only known the guys for a short time, it seemed like they had been playing together for years. I am sure it will be a great gig. There will now be three guitar players as well as the drummer and bass player. I still plan on making more videos and really do want to interview other artists so hopefully, I can get more practice and things to work on.
Well, It is time to get on with the day. As I mentioned earlier, I have been cooking more and have had a few issues, like missing ingredients. Before, I would have just given up and moved onto to something else instead of trying to work with what I had. For instance, I made black bean chicken chili and craved corn bread as corn bread reminds me of chili beans. Maybe because my Mom used go make chili and cornbread a least once a month in my youth. So I went to the cupboard and I was out of baking powder (I used plain Greek Yogurt instead), I was out of milk (I substituted heavy cream and water) it said butter, I was out of that too and if I made more, it would have used up all the cream (I used olive oil). I mixed it all together and prayed.
I even over cooked it a bit as I did not hear the buzzer when the timer alerted that it was done. It turned out pretty darn good and was super moist. No recipe for this one, but maybe I will add it to the book of recipes that I am creating for my kids. Life is like that, like a recipe, you may not have all the basic ingredients but with a little hope, faith and imagination, things do come out alright.
